In a small bowl, stir together 1/4 cup soy sauce, 1 tbsp sweet wine, 1 tbsp honey and 2 tbsp sesame oil. Half of this will be a dipping sauce so add some rice vinegar (to your taste) and set it aside to serve with the fish.
Coat 4 tuna steaks with the other half of the remaining soy sauce mixture (without rice vinegar) and then press 1/2 cup of sesame seeds to coat the fish.
Heat olive oil in a heavy skillet until very hot. Sear the tuna steaks for about 30 seconds on each side and serve with the soy sauce mixture and wasabi paste.
If you would rather be out on the water to catch your dinner, many residents opt for fishing from their kayak. The foot pedal type of craft leaves your hands free for hauling in the big one. Or, if you prefer the guidance of an experienced local, many panga captains from La Ribera will pick you up from the Lighthouse Point beach.
